I grew up more or less in the area… Tottenham… Grand Valley… I’ve always liked the area so when this came up it sort of felt like going home again. I’ve been a chef for over 37 years. I got into cooking because I love the creativity and the technical side of it. I love the people I work with. I expect the local community to support me so I need to support the local community. I’ve always done local… I’m using Hockley Coffee which is just down the street. I’ve got Goodlot, Caledon Hills… I do work with Am Braigh Farms – I produce some food that he sells at his farm store. For me – the most important thing that I want for people to feel about my restaurant is that they are comfortable coming here. There’s nothing better than putting out a busy night. The wait staff, the dish staff, the food, the customers… Everything goes out beautifully end everybody has a great time. It’s so rewarding. I’ve enjoyed every minute of this. I wouldn’t give up having this restaurant. I absolutely love it.
